date nutty slices

Beautiful little treats, these date nutty bars. If you’d like them a little more firm, add less dates and more oats and nuts. Keep in the fridge and place in the freezer for about 15 minutes before serving – they won’t last very long, too delicious to dally around!

Time: 20 minutes + 1h in the fridge

Type: snack, dessert

Difficulty: 1 pan

Makes: 10 to 12 squares

What you need:

1.5 cups pitted dates (about 300g), soaked in hot water for 15 minutes

0.5 cup cashews nuts, soaked in hot water for 15 minutes

2 tbsp peanut butter

1/4 cup regular oats

2 tbsp shredded coconut

50g dark chocolate (at least 70% cacao) + 4 to 5 tbsp plant milk (any)

Utensils:

bowls

food processor

square tray / container with parchment paper

Directions:

Drain and rinse cashews nuts;

Drain dates;

Place all ingredients (except chocolate and plant milk) in the food processor and pulse in high speed until all is combined into a paste (scrap the sides if needed and pulse again);

Place the mixture into a large square container lined with parchment paper and pat down to spread and even out the paste;

Mix chocolate and plant milk in a bowl and heat in the microwave for about 45 to 60 seconds till chocolate melts;

Spread the chocolate on top of the paste and take it to the fridge to firm for at least 1h;

The slices will keep in the fridge for about a week.
