Can’t go wrong chocolate cake

This cake literally takes less than 1h to make and is absolutely delicious! It does have some sugar but no oil or any type of vegetable spread! It’s super springy, rich and makes a nice little treat. Have a go and try this recipe, you won’t regret!

Difficulty: 1 pan

Makes: about 10 slices

What you need:

1 and 1/4 cups all-purpose flour

1/2 or 3/4 of light brown sugar

1/3 cup unsweetened cocoa powder

1 tsp baking powder

1/2 tsp salt

1 cup warm water

1/3 cup unflavoured sparkling water

1 tsp apple cider vinegar

1 tsp vanilla essence

Glaze: 50g dark chocolate (at least 70% cocoa) and 6 tbsp plant milk (any) – add more milk according to your desired thickness

Utensils:

large bowl

mixing spoon

measuring cup and jug

baking tray

small bowl

Directions:

Mix all dry ingredients in a bowl;

Add cider vinegar, warm water, sparking water and vanilla essence and mix well till all is combined;

Tip mixture into a baking try (either lined with parchment paper or greased with a little vegetable oil and dusted with flour) and bake in a pre-heated oven at 180C degrees;

Once baked, remove from oven and let it coo before removing from the tin;

Place dark chocolate and plant milk in a small bowl and microwave for a few seconds until it melts (give it a good stir to mix);

Poor over cake and enjoy!

Note: you can add dark chocolate chips into the cake mix and/or chocolate shavings over the cake for some extra chocolate. It’ll keep for a few days in a closed container.
